Lexington franchisees open second Biscuit Belly

Southern brunch spot known for its damn good biscuits opens in Masterson Station
Louisville-headquartered Biscuit Belly has opened a second Lexington location.

LEXINGTON, Ky. — Biscuit Belly, a Kentucky-based “craft casual” brunch restaurant serving up warm hospitality and chef-driven gourmet biscuit breakfast sandwiches, has opened its second location in Lexington.

The new store owned by local franchise partners, Shoffner Family Foods, is located at 112 Lucille Dr. in the Masterson Station area of west Lexington. The restaurant opened its doors last December 12 and will be hosting a grand opening weeklong event April 8-13, 2024 with deals each day and the chance to win Free Biscuits for a year during the Saturday celebration.

The Masterson location represents the fifth location in Biscuit Belly’s home-state of Kentucky, and the second within the Lexington area.  Having lived in the Lexington area for the last 15 years, Madison Shoffner decided to open the group’s first Biscuit Belly location in her current neighborhood downtown at 652 E Main St.

Shoffner Family Foods, comprising of sisters Madison Shoffner and Mallory Shoffner Quintero, along with parents Jay and Kelly Shoffner, have a prosperous legacy in the franchise restaurant industry. Madison and Mallory, who have been leading the Biscuit Belly charge in Lexington, bring a wealth of experience and local insight to the business; having grown up in the restaurant industry, and with deep roots in the Lexington area, they both are University of Kentucky graduates. The group is thrilled to continue to give back to their community through their new Masterson Station location, providing their neighbors with a superior brunch experience where guests can create lasting memories with family and friends.

“We witnessed first-hand the vibrant growth of Lexington and felt compelled to bring something fresh to Masterson Station,” explained Madison Shoffner. “The area’s energy and appetite for new flavors made it the perfect fit for our second location. The opening of our Masterson Station location allows us to extend our reach in Lexington and we have had a tremendous welcoming so far.”

To celebrate the brand’s newest location, Biscuit Belly will host a grand opening celebration at the Masterson Station location on April 13, 2024. The restaurant will be giving away gift cards to the first 25 customers, free hot drip coffee, and the chance to win Free Biscuits for a Year! As a gesture of solidarity with the community, the Masterson Station location will be donating a percentage of its grand opening day sales to the local Ronald McDonald House of the Bluegrass.
